Sourcing Cage-Free Eggs

Long Island is fully dedicated to procuring ingredients containing exclusively cage-free eggs. While our usage of eggs or egg-related food items may not be extensive, we are committed to collaborating with suppliers to ensure that all restaurant menu items exclusively feature cage-free eggs by 2026.

Our pledge to cage-free eggs aligns with our dedication to the compassionate treatment of all animals. Although the thoughtful implementation of changes in the supply chain will take time, we pledge continuous cooperation with our suppliers to bring about meaningful and positive transformations in the humane treatment of animals.

Our Principles
We are unwaveringly committed to the highest standards of food safety across our restaurants, bakeries, and shoppes.

We adhere to all relevant FDA guidelines, including those pertaining to the use of antibiotics in animal-based protein.

We actively seek suppliers who share our values and are actively pursuing common goals.

Our Actions
Our vendor qualification and quality assurance processes are designed to guarantee that we source animal proteins, including poultry, dairy, and egg products, from responsible suppliers who meet our standards and adhere to industry best practices in animal welfare.

Our internal team conducts regular on-site audits or compliance reviews confirming that supplier practices align with our stated commitment.

Performance Guidelines
We base our practices on the guidelines established by the following organizations:

  • National Chicken Council (NCC)
  • American Meat Institute (AMI)
  • AUS-Meat Limited
  • American Humane Association
  • National Turkey Federation (NTF)
  • National Pork Board
  • United Egg Producers (UEP)

We are also proud supporters in the annual Poultry Welfare Auditor Certification Training conducted by the Professional Animal Auditor Certification Organization (PAACO). PAACO's mission is to promote the humane treatment of animals through education and auditor certification.

Broiler Chickens
Although Long Island is not directly involved in raising, transporting, or processing broiler chickens, all our broiler chicken suppliers are dedicated to exploring new techniques and emerging technologies to ensure the humane treatment of chickens throughout the production process. This commitment is evident in our broiler chicken suppliers maintaining animal welfare certifications aligned with widely accepted industry standards, and they undergo routine audits for compliance by leading industry associations.

Recognizing that advancements in science, industry, and standards in farming and animal welfare are ongoing, we pledge to continually strive for the best standards in areas concerning broiler chickens and other proteins. We aim to make consistent progress in collaboration with our suppliers, community, and partnerships.
